Meet The Team
Claire Stott - General Manager
With over a decade of experience in the hospitality industry, Claire Stott has been an integral part of the Nanteos Mansion team since 2014, beginning her journey in the Reception department.
Now as General Manager, Claire oversees the daily operations of the mansion, ensuring that every guest receives exceptional service and a memorable experience.
​
Beyond her role in the office, Claire can be found on wedding showarounds, personally welcoming guests at reception, or perhaps even doing a spot of gardening, reflecting her hands-on approach.
​
Outside of work, Claire is a keen bird and wildlife photographer with a passion for the natural world. She also dedicates her time to the local community as the Team Leader and a foster carer for the Aberystwyth Cats Protection branch.
Dewi Ellis - Head Chef
Dewi is Head Chef here at Nanteos and has been part of the family since 2022, working his way up from Chef de Partie to Head Chef.
​
He loves to cook on the stove section, as well as run the passe. Originally from North Wales, but moved to Aberystwyth with his wife and two daughters from Cardiff, where he was Sous Chef of an AA accredited village pub on the outskirts of the city.
​
Dewi's favourite dish on the menu is the 12 hour braised Pork Belly, pair that with a nice bottle of Black Dragon Cider and
“it does the job”!

He spends all of his spare time with his young family. Recently he’s been going to watch Aberystwyth Town Football Club and play the occasional frame of snooker.
Alec Almoosa - Food & Beverage Manager
Alec has been the Food and Beverage Manager at Nanteos Mansion since February 2018, bringing over six years of experience in the hospitality industry.
Starting his career as a waiter, Alec has worked his way up through the ranks, developing a strong passion for delivering exceptional dining experiences.
​
A certified Level 2 WSET wine award holder, Alec enjoys expanding his knowledge of wine, with a particular fondness for Austrian Gewürztraminer.
In his spare time he is a keen saxophonist and loves to travel, often seeking out new wine regions to explore and learn from.
Sarah Brady - Wedding Coordinator
Sarah has over 20 experience in hospitality and weddings and has been lucky enough to work for some great Companies all across that UK. This has given her a wealth of experience and skills, including being part of the Customer Service Team of the Year, which she now puts to great
use in her role at Nanteos.

Sarah has worked at the Mansion for 3 years. Her favourite part of Nanteos is the beautiful grounds and ancient trees that have seen so much history and changes, if only they could talk!
​
Sarah moved to Wales 3 years ago with her husband and bought a small holding which she shares with 2 dogs, a cat and 3 horses. When I’m not in work Sarah can be found riding around the beautiful West Wales coastal path and countryside and looking after her 4 legged gang.

Aysha Fox - Housekeeping Manager
Aysha has been the Houskeeping Manager at Nanteos for 6 months, joining us as a housekeeper 9 months prior.
Before Nanteos she has worked in a variety of jobs, from looking after animals to working in the NHS, reflecting her caring, compassionate nature.
​
In her free time Aysha enjoys being active, having recently started attending a local gym. She has also chosen to partake in an online course to become a personal trainer in the future.
Julie Jones - Reception
Julie has been welcoming guests to Nanteos for over 8 years now. Known for her warm welcome and keen attention to detail, Julie ensures that every guest feels at home from the moment they arrive to the moment they leave.
Julie's dedication to hospitality and her genuine enthusiasm for the unique charm of Nanteos make her an invaluable part of the guest experience.
​
When not working Julie enjoys spending time with her pets and her family, particularly her grandsons with whom she loves watching rally stages and rugby games. She is also an avid knitter!
